Rich Chocolate Fudge Cake
An intensely chocolatey cake with a dense, fudgy crumb that melts in your mouth. Topped with a glossy chocolate ganache frosting, this recipe is a must for any chocolate lover's celebration.
Ingredients
- 12 cups all-purpose flour
- 22 cups granulated sugar
- 33/4 cup unsweetened cocoa powder
- 42 teaspoons baking soda
- 51 teaspoon salt
- 61 cup buttermilk, room temperature
- 71/2 cup vegetable oil
- 82 large eggs
- 92 teaspoons vanilla extract
- 101 cup hot brewed coffee
- 11For the ganache: 12 oz semi-sweet chocolate chips
- 121 cup heavy cream
Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
Add the buttermilk, oil, eggs, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
Stir in the hot coffee until well combined. The batter will be thin.
Pour the batter evenly into the prepared pans.
Bake for 35-40 minutes or until a toothpick comes out with just a few moist crumbs.
Cool completely in the pans on wire racks.
For the ganache, heat the cream until it just begins to simmer. Pour over chocolate chips and let stand for 5 minutes.
Stir the ganache until smooth. Let it cool and thicken to a spreadable consistency.
Frost the cooled cake layers with the ganache and serve.
